The purists say you can taste the propane. I never could.

 

I have been smoking with a Komado, a heavy large offset, and even with my gas grill, for about a dozen years. I don't think it makes a lot of difference what you use so much as how you use it.

With propane you taste the meat not the heat

I have a couple friends who like their pellet smokers. A little more money but they sure swear by them. One has a Treager and one has a Greenmountain. I haven't used either but have tried the meat from both. All I know is that the end result was pretty darn good.

A friend of mine made his own out of wood a few years ago. Imagine a tall skinny dog house, hard to believe wood doesn't burn, but it works awesome. I will try and get you photos next time I'm over at his house
