Check oil level first.  If level is good, and oil does not have any condensation in it, put a mechanical oil pressure gauge on it and see if it is actually dropping to zero.  If you live in a cold area, make sure that you do not have condensation in the oil that is freezing in the bottom of the oil pan.  Believe it or not, I once worked on a Dodge van that had about 3 inches of water in the bottom of the pan that was just loose enough around the pickup to allow some oil through, but not enough to supply the engine at anything over 3k rpm.  This was in the winter in Peterborough Ont, where temps would drop to -30F for month at a time.

It also may be as simple as a wire getting pinched or stretched under full throttle, a mechanical gauge will tell you that.
