New Driver tips for driving up and down steep grade mountain terrain

Hi just bought a 2012 sierra ext cab 8ft bed with a camper shell. fully loaded. plus bike rack on back.

driving cross country from oregon to jersey. taking the northern route and plan to stop in yellowstone, black hills, etc.

 

Any pointers for those steep mountain grades? I'm a new driver in general and unfamiliar with how rwd benefits specific environments and how the M 1-2 works. someone mentioned to me about engine braking. Can anyone here further explain? when to use M?

suggestions for preferable highways/interstates are welcome as well.
