2011 GMC Sierra with 26 inch rims and 6.5 inch lift and 37x13.5x26 tires 

 

Any recommendations  on whether this will work or not ?

 

Will I need blocks? I know I have to cut out the trim to get tires to turn. Just need to know if I need 7 or 8 in lift or will 6.5 work ?

Well, our 2012 has 35 inch tires and rubs some with a 6.5 inch lift and some trimming was done and it rubs on full turns.  You might consider adding a body lift or an even higher suspension lift to run 37s.  Check out the Custom Offsets gallery where you can search and see if someone has done what you are looking to do.

I hope you don't plan to off-road on those size rims.

You'll need, at least, an 8 inch lift. I've got 5.5" of total lift and best I can do are 35x12.5x18s. With 37x13.5s and the necessary offset, and trimming, you're still gonna need a higher lift.
