2000 Silverado 1500 Squeak When Accelerating

When I first accelerate from a stop it sounds like 2 small chirps from the rear of the truck, however if I take off extremely slowly and smoothly the chirps dont happen. Does anyone have any idea what this could be? Any method to narrow down where it comes from?

Yes. But if you've never done it or seen it done you might want to get some help from someone who has. There are a few tricks to doing it.

If they haven't been replaced before, you're gonna have to get a torch to heat up the injected plastic holding the old U-joints in. (A small butane torch with the yellow can should work). BLOCK ALL THE WHEELS before you pull the driveshaft so it doesn't roll over on you and kill you. I'm no sure if the sealed or lubeable joints work better, someone else will have to chime in...
