Just joined the forum and looking to contribute, so I'll start here.
I was actually looking to do much of the same and came across these guys (LLJ Customs) as they make a few things in regards to harnesses and what not to make the install easy. https://lljcustoms.com/collections/chevy-gmc-cadillac
Sounds like with the Bose system integrating an additional Amp for your subs seems fairly easy. Essentially they make a harness to connect your signal wires from the factory Bose amp on the back wall behind the seat. From there I'd have to do a little more digging, so I cant help much there. But seems like a legit company that knows what they are doing.
Here's one of their videos doing a new amp and sub set-up on a NON-Bose system (Though they elude to where the factory Bose amp is located). I'm sure they have a Bose system video as well somewhere but haven't stumbled across it yet.
As for under-seat boxes, there is a ton out there to choose from. I've always used Down-firing boxes under my rear seats as they tend to sound better. But really comes down to personal preference or what type of sound you're looking for. I'll be doing my set-up here in a couple months, but I'll be following this thread for anyone else that has some additional insights.
Shows the back wall with seat removed and where Bose Amp would be (5:30 minute mark):
If you are doing a more traditional RCA+Signal wire sub set-up (Again this is most likely Non-Bose but I'm sure they have something for Bose on their site):
