Won't Run Cold, 07 Gmc 6.0

Hi all, I bought an 07 GMC 2500 HD with the 6.0 gas.. it's a very nice truck but has a problem with cold start take off, It starts just fine in the morning but pulling out on the hwy it just falls on it's face.. and you have to back completely out of the throttle and barely ease back in to it untill it gets rollin good and you can give it a little gas.. but then I have to stop about a mile down the road at the sign and it will do it again. It just won't run right untill you get it to operating temp and then everything is good! Anybody know whats causing this kinda s*&t? it makes no difference if the weather is warm or cold out.. it does the same thing! thanks for any help.
