Sorry if this sounds stupid. My current 2019 Sierra has 20' wheels with +28 offset stock I'm looking at having them extend further out of the wheel well by about 1-1.5 inches. Would the safest route be to just get rims with around 0 offset? I definitely don't want to get spacers, and I don't want to get wider tires than I already have. Also, would 0 offset cause rubbing on this truck? This is a 2019 Sierra AT4.

Zero offset wheels are a better option than spaces other than the cost of new wheels versus the cost of spacers. If you use the same size tire as stock then they will not rub. I have done lots of research on this as the first thing I am doing before picking up my new AT4 is getting 18x9 fuel rims in +1 offset and putting the stock duratracs on them. 
Just remember with these new brake calibers not all wheels will fit on these trucks. It depends on the shape of the wheel although a zero offset should help that in some cases.
