I know of a few to go to over on the far east side such as the Dayton area plus there are a couple of places down on the south side such as Egret Bay.

The two that are in the Dayton area I'd probably have to show you because there are a few back roads involved and I recognize them by landmarks more than road names.

Egret Bay is easy to find.Go 45 south to Nasa Rd 1 and take a left.Cross Hwy 3 and a few lights down you'll come to a road that's called 270 to the right and El Camino Real to the left.Take a right and cross the bridge. On the other side of the bridge you'll see a road that cuts to your right and a smaller road that goes back under the bridge.Turn right on that road and the area is on your left right by the water.

Forewarning: Don't go to any of these places alone because they can be very nasty!

If you want to find some people to go off roading with or maybe even some more places, check out the TX 4x4 club online and find the chapter that's closest to you.Join up with the club,it's free. They are a good organization that lives for off roading and also do charitable events in the communtiy.
