Old School gauges on a 2000 Silverado...

I'm pretty old school in everything I do.  I'd like to install gauges on my 2000 Silverado without messing up the electronic gauges already on the vehicle.  Can I just tap off of existing engine ports such as an oil passage or water passage, install a "T" fitting, and add old-school sending units for oil pressure, water temperature and such without messing up the onboard electronics?  My current gauges are a bit erratic and I've learned that seems to be a common problem due to something called "stepper motors."  Even if I repaired the factory gauges, I still prefer the older style gauges.
