Temp gauge fluctuating and rising

hello and thanks for the add. i did a search and really didn't find any info on my problem. i have a 2014 1500 V6 with 140k on the truck.

So this past weekend drove to phoenix and towed a trailer, weight was like 5k. truck drove great and didn't notice anything out of the ordinary.

Saturday morning noticed that temp gauge didn't move after warming it up. so replaced temp sensor and thermostat. dealer did't have them in stock so went with Duralast, due to fact we had to drive back home.

at first even with new sensor gauge wouldn't move so did a search and read to unplug battery and it started working. Well on our drive home noticed that on hills or when accelerating temp would rise to like 230 and when we would get to flat road it would go back down.

so my question would be should i change out the water pump also and see if it corrects it. even now back at home it doesn't overheat at idle and seems to run fine but temp slightly goes up when accelerating??? never seen temp go up even when going driving to vegas in summer doing 90 ??
