6.2l Overheating?

I just bought a 07 Sierra denali. It has the 6.2l and driving down the highway it runs right at 210. But when i shut it off and start it back up i can hear the fans kick on the the temp gauge shows 230-240 and i will watch it for a min and will suddenly jump down to 210 again. Could my gauge not be reading properly or is my thermostat not working like it should or something? is this something to worry about? ive had an 04 silverado an 01 sierra denali and a few trans ams with the ls1 and ive never had this problem in any of them. any help would be great.

I don't see it a problem as long as the temp is coming back down. When you shut them off, they get hotter before they get cooler. It sounds normal to me, but I've never really payed attention to mine. I'd suggest since you may not know the history of the truck to put a fresh 50 mix of antifreeze and change all the fluids. I'd seriously consider synthetics since they have better lubricant properties.
