Switch from Auto Climate controls to manual controls?

I'm not a big fan of the auto climate control panel in my 11 Sierra SLE. The buttons are tiny and hard to find. Not real big on looking down to find a little bitty button while driving down a crowded interstate at 70mph.

 

I know you can't just switch out a manual HVAC control panel for the digital HVAC panel, but can you do the opposite? Could I pick up a manual, three-knob panel and swap out my digital panel?

 

I know I would loose the ability to control driver and passenger separately, but would it function like a standard system?

 

Anyone know?

You'd have to change a lot of components. It's all electronically controlled and most likely handled by BCU programming. Not much is "swappable" these days.
