84' K10 Engine & Tranny Swap Help

Hey there,
I'm doing some research into swapping a new engine and transmission into my 1984 K10 pickup. 
Truck has the factory 305 in it (110,000 miles) with the factory 4 on the floor manual transmission. 4x4 model as well. This truck wont be used for mud bogging or towing anything heavy. More of a daily driver / pavement princess. 

I think I'm leaning towards just getting a crate engine and tranny to drop in there. I know i want to put a 350 with some more power in it, but I'm having a hard time deciding between a carb or a fuel injected system. I don't think fuel injection is really necessary for what i want to use the truck for but I'm not opposed to it.

For a transmission, I want to keep it manual, but I definitely want a 5 speed. I don't know much about transmissions so I'm looking for some advice on this one. 

If anyone has done a similar swap I'd love some input! 

Also not opposed to dropping  a diesel in there......
