2000 Gmc Sierra Stalls When Engine Partly Cools Down

I have a 2000 GMC Sierra 4WD that is approaching 200,000 miles. The truck runs great with no issues with the exception of a starting problem. It starts fine if the engine is hot or cold. However, if the engine has come up to temperature and is allowed to cool part way down it is very difficult to start. This happens when the engine cools for about an hour after coming up to temperature. When it does finally start, it idles rough for a few seconds and then takes off as if nothing ever happened. Any ideas?
