need help with rim size / offset

i recently bought a set of KM2 285/75/17 after putting in a 2.5" leveling kit, 3" rear block and a 1.5" body lift. the tires are on stock chrom clad rims but being on such thin rims, they make the tires look exceptionally thin, im looking at getting new rims at a local swap meet this spring. Right now these tires dont rub at all, i have tried to get them to rub in all sorts of conditions and they simply wont which makes me think i have a decent amount of room for wider rims.

 

what would be a good offset for new 17" rims and what would be a good width? i think these tires measure at 12" wide. Ive never even looked into purchasing rims so i dont even know what to look for.
