 so about 4 months ago I noticed my fans running and my temp gauge needle was all the way down as not registering or not warmed up. I parked the truck and noticed the fan was still running as I shut it off. I disconnected the battery terminal and they shut off. The next morning I started up the truck and it instantly did it again. I changed the temp sensor and it seemed to correct the issue until last night. The fans were running again. I bought the sensor from auto zone but was a ac Delco one. Should I be trying another option to fix this? I read change the thermostat instead cause it could be that rather the sensor. Please help.

It is most likely the thermostat.  Probably stuck open or partially open.  Temp gauge reading full low and fans on High is a default self protect mode of some kind.  I would disconnect the battery and change out the Thermostat.

It was definitely the thermostat and what’s nuts since I bought the truck the temp always fluctuated I guess from air in it by not being bled correctly. It stays at 210 without movement now.
