I have a 94 CK2500 with the 350 motor.  When I press the accelerator the motor for lack of a better term the motor falls off.  It's almost like it is starving for fuel.  I have changed the exhaust from the converter back, fuel filter, fuel lines, O2 sensor, MAP sensor, coil and distributor, it has not resolved the problem.  Looking for other possibilities, my next move is to cut the converter off see if that helps.  Any other ideas on this?

Welcome to the Forum!! There are screens on the fuel injectors. Take a timing light and point it at the injector spray and see if it's spraying a good pattern. What is your fuel pressure? Do a volume test as well with a FP gauge with a dump valve on it, the engine should stay running with the dump valve wide open. There is also a sock on the fuel pump intake if it fails the volume test
