Coolant Temp Sensor Question

Ok I know that a Coolant Temp Sensor tells the ECM if the engine is hot or cold to adjust the fuel supply but can it also check your coolant level? By this I mean does the sensor know if it is submerged in coolant or not?

 

The truck I'm asking about is a 94 Sierra with a 350 TBI.

 

I'm asking because I'm sure many of you have seen my posts about the stalling issue I have been having at start up, and I just changed my water pump since it was bad and I have not had the problem since. I'm hoping that this is finally it but I don't understand how it could be.

 

I'm just happy it's working, but still curious...
