will the Goodyear Duratrac 295/65/18 fit with just a 2" level? Or should I stick to the 285s from everyone else

Depends on your offset. If you keep the factor wheels you might have to just trim a little plastic.

I had to trim metal with a 4" lift - 18x9 wheels and 5" BS

I would be keeping the stock wheels. By trimming plastic I assume that means the inside fender liner?
