Running Mobil 1 and going 7k miles on the oil change would work well since you can tie in the tire rotation along with it. Keep to that schedule and it will last a long time.

Dexcool is 100% fine. When they say 5yr or 150,000miles for changing it, they mean it. My opinion is that some of the horror stories came from people who though that "long life" coolant is apparently "lifetime." The additive package inside does go bad over time.
