Preparing for a special wine dinner (each course served with a different wine) at work tonight.  Price is ? a head.  Here's the menu-

- Rabbit Liver Mousse on Pistachio croutons, served with a Schmitt Sohne Riesling

-Smoked Quail Salad with Grilled Plums, Prosciutto and Black Muscat Vinaigrette, served with a Domaine Du Monnet

-Grilled Wild Boar Sausage with a Pear Mint Chutney, served with a Ravenswood Lodi Zinfandel

-Intermezzo with Prickly Pear Sorbet

- Pan Seared Ostrich Medallions wrapped with Apple Smoked Bacon with a Juniper Berry Sauce, served with a Church Block Blend Cabernet Sauvgnon

-Flourless Chocolate and Tarrogon Torte with Raspberry Sauce, served with Chateau Souvrin Cabernet Sauvignon '97 Vintage

If you ever are offered Ostrich, eat it. Best "bird" out there.  Same with Wild Boar sausage,  much better than pork.  My personal favorite dish that we prepare is the Elk Tenderloin with Blueberry Sauce and Truffle Oil.  There is no finer meal than Elk.  

Any game and wine lovers out there?  Wish you could all come in tonight and try some.  Maybe at Mervz big GMTC cookout??

I've had Elk a few times and lots of rabbit, but quail, ring neck pheasent, and grouse are my favorite.  I can remember when I was younger mom would have one of those 3 fixed for supper every Sunday, like clockwork.  (depending on how well me and dad kept the freezer stocked)

I'd really like something like that. "up north" towns often sponsor wild game feeds and have some unusual things to eat. They are always well attended. Why does it always tast like chicken?

I'm not really big into eating game. I just stick to the usual household meats, like beef or chicken. I don't like to kill game either, it's just not me. I enjoy just looking @ them and taking pictures of them, Their too pretty for me to kill. So I just prefer to shoot  skeet or paper targets rather than living creatures.

But I ain't no PETA either!

But  I would like to catch fish and eat them, if that's considered "Game" in a sort.

About the only wild game meat I get to eat regularly is Venison.  My mom doesn't like to fix quail, pheasant, dove, rabbit or anything else I usually go hunting for.  Of course, since I started deer hunting a couple of years ago when haven't really done much hunting for anything else.

I do think my favorite meat I have tried is elk, it tastes really good.  I love to go wild game feeds and just try stuff out, not to mention it being much healthier for you then beef, pork, or chicken.

Can't say I've ever had elk, but I LOVE venison.  Not venison that's raised to be eaten like a cow, but the kind that you go out and get yourself.  We've got real corn-fed beauties around here that are the sweetest thing going!  Wild turkey, too.  Nothing tastes better than something you've brought home yourself.  Or at least enjoying the fruits of your buddy's labors (and better shot!).

The way my mom would always fix it, from what I can remember, was she's boil the bird until the meat practically fell off the bone, then tear it up into strips, roll it in flour, then fry it up.  Then she'd make some gravy to dip it in.  Mmmm!  I wish I had some now.

Well the dinner turned out great.  Lots of people came and left full and happy.  Not a lot of wine left, but a little Ostrich and Boar sausage.  Very classy affair.  We'll probably do another one in the fall.

Glad to see some game fans out there.  It's an acquired taste and a different way of eating.  I can't eat that rich food all of the time though.   But guys like the General, bowtiefan, and LT,  I am giving you excellent advice here, "Eat More Elk."   It's so good it'll make your tongue hard........

Right now we're selling a mixed grill at the resturant.  It's a misquite grilled quail, a bison sausage, and an elk chop.  Served with braised red cabbage, and the quail has a honey cumin glaze on it.  We're going to have Pheasant thighs soon on the menu.  I agree that ostrich is on of the better bird for eating.  As long as you cook it no higher than medium.  Otherwise it tastes like burnt burger.  Had Emu once and it was a bit tough.  There wasn't enough marbling in the meat to keep it moist.  But I'm getting into the game cooking.

We did a mixed grill as a special the other night with Lamb and the ostrich and boar sausage that went over real well.  We also have been doing live Maine Lobster this week, which in Colorado is pretty tricky.  Went in the walk-in the other night and one was trying to make a break for it.  Wonder where he was going, the trout pond?  I'm also enjoying cooking game, but at heart I'm still a burger and fries guy.  Buffalo is good, but so lean that to me it's kind of tasteless-

I've noticed that the bison is a bit sweeter than regular steak.  I like it when we have it.  When I was working in Shelburne,VT we would run bison all the time.  Mostly roasts cooked like a prime rib, but occasionally we would have top butts, strips or tenderloins.  Noting beats a rare bison filet with bearnaise sauce.  MMMM MMMM Good!
