2017 silverado 1500 z71 wheel fitment question!

Hey guys.. I am aware that there is alot of topics about this but havent yet found an answer to my question so here it is;

 

I bought a brand new z71 2017 and would like to upgrade stock wheels and tires with something that would just peek out of the fender so it gives it a nice look all around. Should i focus on offset from wheel or tire width? I dont mind trimming the plastic from inside the fender. Leveling kit? If that is my only option i might aswell go with a full suspension kit... anyways let me know if this is possible by only changing wheels and tires.

I have a 2017 Silverado Crewcab LT. I went with a 2" Motofab front level kit. Wheels kmc XD Grenade black/milled 20x9 +18offset with 295-55-20 Nitto Ridge Grapplers. My opinion looks awesome.flushed with fenders type look. I GET SLIGHT RUB at full wheel lock both left and right on the plastic carpet like liner under the fenders.only real CON is that now my display board says "STEERING ASSIST IS REDUCED DRIVE WITH CARE" on my dashboard? the tpms sensors not a problem maybe the alignment the shop did didn't match with my 2017computer since its an electronic power steering. I hit the dismiss button it goes away like any other alerts but when I turn off then turn on the truck the same message POPS up
