Can someone tell me what type oil pump is being used in the new 5.3 GM engines? Mine fluctuates with engine revs all the way to 80lbs. when shifting. It will go up to 60lbs., hesitate, then jump on up to 80lbs.

It's a variable oil pump. It changes pressure based on engine/computer demand.

 

It's going to bounce around all the time when it's computer controlled. Seeing 80psi is pretty high though, usually the max I see is 60-65psi when it's warm under heavy load.
