If I were to pick up tail lights with the wiring harness attached to them out of a non-LED truck would they be plug and play for my 2020 LTZ with LED tail lights or would I have issues? I keep burning out LEDs and I just want to go to a regular bulb.

Not plug and play.  Connectors are different.  

 

I'd see if gen5diy offers any sort of PnP harness or if they can make one.  They do offer the incandescent to LED PnP harness, but I don't see one going the other way LED to incandescent.

Not OP but the leading failure point for factory LED tail lights we've run into at work is water intrusion.  Hairline lens cracks, broken lenses, cracked housing behind the lens, bad lens seals.  That said, defective LED chips is a possibility, but so far slim signs of that.
