Tire Pressure

With stock tires(245/75R-16E, max tire pressure 80psi), the door panel says front-50psi and rear 80psi. I just put on 265/75R-16C and the max tire pressure is 50psi. What should the tire pressure be for the front and rear? I puchased the tires and rims on ebay.

Try 45 PSI front and 50 PSI rear and you better not load rear of truck now to max too as you have lost about 1000 lbs of capacity.

I've got the same size as your replacements on my ride and I run about 40 unloaded and it's just right.

Unless you really load it down you could even go down to 35 psi or so (1500 specs). But it's really a personal preference between ride and capacity.

I run 45 in the front and 40 in the rear (when empty). Running around in an empty HD with max pressure in the rear tires isn't necessary

"snoman" hit on one of the most important things to consider from a safety standpoint, Load Index (capacity). Recommended cold inflation pressures are based on a specific vehicle, load, and tire. If your truck is a 2000 K2500 EC, LB, HD it's GVWR is 8600 lbs. (vs. 6400 lbs. for a K1500). Reputable tire retailers wouldn't sell a tire with a Load Index and/or Speed Rating lower than the vehicle manufacturers OE specification. LT245/75R16E tires have a Load Index of 120 (single). LT265/75R16C tires have a Load Index of 112, lower than your OE tires. You might consider going to an authorized dealer that sells the Load Range C brand you bought and ask them what they think.

Another thing to consider is state inspections if you have them. In PA where I live, that tire/truck setup isn't legal. The tires have to be at least as capable as stock.
