Need exhaust advice

I have a 1997 Chevy Tahoe, 2dr, 4wd, pretty much stock except for 33X12.50 BFG All-Terrain tires and aftermarket rims. I am getting ready to update the exhaust sysyem with headers and dual exhaust. I already have the dual system set up with a true dual system with stock cats and magnaflow mufflers. I want to get headers put on at the same time and would be greatful for any advice anyone would be willing to give me regading what brand of headers i should use and what type of coating I should go with (black, stainless, ceramic, etc.) and any pros or cons with keeping the cats on or taking them off. Thanks
