One Type Of Synthetic Oil Or The Other? Which One Is Better?

I just bought an 07 Sierra with around 18k miles on it and the previous owner switched from the original synthetic to quaker. Should I change it back to Mobil (or another type of synthetic, are there differences, why would one be better than the other?) during the next oil change?

 

 

Also, since this is where the experts are does anyone know where can I get a chilton's (or better) total repair manual for my gmc?
