Auto X-Ray

I recently bought an Auto X-Ray scanner. It gives me all sorts of information and even has a feature where I can watch what the engine is doing as I drive. My question is if anyone knows where I can get the specs for a "normal" engine. The types of info I get off the scan tool are, voltage at the catalytic converter, intake temp, water temp, block lean for each bank, timing advance, short term fuel trim, air flow rate in lb/hr. While I realize that this can be a great tool for tuning and troubleshooting, I really don't know what half this stuff means. The book it came with somewhat explains what each means, I am looking for some hard data so I know where I stand.  Thanks for any help you can give.

I bet that if you had the GM service manual for your truck, half that stuff's "normal values" would be listed in tables.  All of that is essentially data to help fine-tune the engine, or re-tune it if it has a royal problem.  That's where I'd start.
