Water pump/coolant temp issue

Hey guys I just got done replacing the water pump on my 6.0, and when I went to go for a first drive afterward the temp gauge acted normal until about 10 minutes into the drive, then it just dropped as if it was off. So I turned back around and headed home. When I shut the truck off and turn the key back on, the temp gauge came back on then after about 5 seconds it would drop back off again. I took a temp gun to my:

Engine block: 183

Head: 140

Water pump: 143

Could my temp sensor have an air lock around it so it won't read anything or is it a bad sensor. When it was around 200~ deg I checked the resistance of the temp sensor and it was 0.2 ohms. Is my sensor bad or what could cause it to come on for a few seconds the drop back off? I'm going to check the resistance tomorrow morning to see if it changes with a cold engine. I have driven it about 80 miles since and for the brief time the temp gauge comes on and from my temp gun I can see that the engine is properly cooling so I think the thermostat is fine. Thanks guys. Any opinion or advice is appreciated.

Yes on the air, its reverse cooling engine, so take the cap off the coolant tank and let engine run at temp for 20 min, this should purge it by its self. then put cap on. Good luck@

I checked the resistance cold and it was still 0.2 ohms. I'm gonna take the cap off and try to burp it.

Update: problem solved. It was air in the system.
