Wheel/tire setup - Need advice

So I've browsed and searched the forums, and there are too many damn threads to look through, so I'm adding another...

 

I am looking to pick up a set of wheels and tires for my Sierra, but have questions on fitment issues.  I currently have a 2014 Sierra 4WD Crew Cab on stock AT 18's with a 2.5" RC lift kit installed.  I am not sure what wheel offset or tire size to go with.  Here is what I am looking to purchase:

 

- 18x9 Fuel Anza wheels

- Terra Grappler G2's, but open to options

 

Any help would be appreciated, along with pics if someone has a similar set up.

I have the Fuel Anza 18x9 with Cooper 305-60/18 (33x12.50x18) STMaxx tires on my 2014 Sierra AT.  My wheels are 5.75" backspace.  They don't rub, but they are very close to the stock swaybar, fender liner, A-arm.  I replaced the swaybar with an aftermarket (Hellwig?)  bar that has more clearance.  But it wasn't necessary.  I ran them with stock forged steel upper A-arms as well as the Cognito uppers. 

 

When you compare tires, use the actual detailed specifications on the manufacture's website or seller's site.  Not the marked sizes.  The tires vary in diameter and width quite a bit within each designated size. My Coopers run a little small.  They are actually something like 32.6" x 12.1" x18.  It may not sound like much, but when you are as close as I was to rubbing, it matters.  I really pushed it as far as I could.  I'm probably going with a different make tire next year when I replace them.  The STMaxx is just a too noisy for my tastes, when they get worn and they are getting out of round.  I'm looking to go back to Toyo in a slightly narrower width, which I've had on prior trucks.  I had 3 sets of them and got good wear and performance.  Nitto is a subsidiary of Toyo and generally is their less expensive line. 

 

The 5.75 backspace keeps the centerline of the wheel in the same location as the stock 18x8.5 chrome AT wheel, which is 5.50" backspace, if memory serves.

What does the 5.75" backspace compare to when talking offsets as in -20, -12, etc?  I have the stock swaybar, but would swap it out with an aftermarket one if needed - Just looking to see what my options are.  I haven't done much with wheels/tires before, and I would rather be prepared than not.
