So I got an 2000 Sierra K2500 has about 80K I dont know what type of maintenance it has had to it so i figured I'd start with the oil change. it has the 5.7 gas and of course ill be plowing with it this coming winter

5W-30 of whatever brand you prefer.  I stick with conventional with a 3000 change interval.  Most brands are decent, i've used Mobil, Valvoline and Royal Purple.  I know my 350 is 5 quarts.

Lots of debates on here about oil and filters.

Pick one that makes you happy.

Changing the oil and filter is more important than the brand IMO.

Yeah, brand is not really an issue.  Find a good brand you prefer and look for sales. Don't even be afraid to change brands when pricing is good.  As long as an oil meets the specs you need, it can be used.  Just a thought, but for a MY 2000 vehicle,  you have a  wide range of options regarding oil, and I would seriously consider a diesel rated oil.  They tend to have much stouter additive packages than gasoline rated oils, yet they meet many of the gasoline specifications.  Maybe not dexos1, but then, your ride doesn't call for dexos1.  Maybe not SN or GF-5, but your ride doesn't call for those either.  All those specs are for more recent years.  A HDEO that meets CJ-4 diesel and SM gasoline would be a killer choice for your engine.  And pricing can be sometimes better than the straight gasoline rated oils.  And yes, there are a few 5w30 diesel rated oils, but most are 10w30 or XXw40.  A 10w30 would work fine for you also.  There is only a 5 degree difference in cold winter flow rating between a 5w30 and a 10w30.  My wife's 12 year old Cadillac CTS has only gotten a 10w30 Pennz conventional oil the entire time we have owned it and hasn't complained.  Even though GM said that it required a Mobil 1 5w30.  The Pennz meets the 6094M  spec the engine called for, so I am not spending a wad of money for Mobil 1.
