New Wheels and Tires

I have been searching for an answer on this vast forum for a little over half an hour when I finally gave up. I have a 2016 Silverado 2500HD Z71 LT with stock suspension.  I would like some new wheels and tires. Stock tire size is LT265/70R17. The research I did about the subject led me to believe that I can (perhaps?) do the Nitto Ridge Grappler LT285/70R17 (32.7x11.5) and would like to go with the 17x9 0 offset wheel from American Racing AX202 couldn't find a positive offset. There are also similar sizes from the Nittos for 18'' and the 20'' wheels in case the 17'' doesn't work for me . I just like to have a smaller wheel and more rubber. The wheel wells don't have mud flaps for some reason. I would like to keep the truck stock for now at least, so no leveling kit or lift. I also would rather do no trimming if possible.

 

Would the 285/70 work for me without rubbing or scrubbing? If so what offset on the wheel should I go with? I would like a bit of stance/stick-out. What is the factory offset and backspacing on my stock 17 inch wheel? Would a 0 offset wheel cause too much stick-out? To rephrase, what is the largest and widest tire that I can install there with full lock and no rubbing?
