If it matters any, I just brought my truck in for the same reason.  Since new (2016) its at 210 (195 degrees officially).  Since last October its been 1 notch below what I call "normal".  The service advisor took my truck in and they put the PET scan tool on it and even called up GM.  They said it was completely normal and no issues.  Well I know my pickup and know it is definitely not normal.  I talked to the service manager (who I know quite well).  He made a phone call and in moments notice I was in a loaner vehicle for the night and they would have a new thermostat in the next morning.  Low and behold I got a phone call the next morning to come get it and its back to normal again. This exact issue is more often than none a thermostat issue if anyone deals with it.
