Use Helicoils, or my preferred method, TimeSerts to repair the stripped holes.

 

If access is impossible, the engine will have to come out, unfortunately, unless you can just fit a drill and a tap in there, and just bore it out to the next larger fastener size.

If you can do it in place, and the hole is open to the oil system, then slather grease on the drill bit and the tap, and only do a little bit at a time, cleaning out the metal chips and replacing the grease to minimize what metal goes into the engine.

Been there done that, time is money, don’t fart around with it all damn day just go to a junkyard and pay $20 for a oil pan or get a used one online. It’s a basic LS motor there’s a million out there. If you seriously want to try it you have to remove the pan and put it on a bench, there’s absolutely no was of doing this in the car.
