Currently have 295/65r20 Nitto Ridge Grapplers. Been a GREAT tire but looking at something a little lighter and slightly less aggressive.

Settling on 275/65r20 in the above group. I had not even considered the Wranger ATs until my tire guy has a pair of used 4300 miles for $800 out the door. Am I overthinking it? Never purchased used tires before and haven't seen many running the Wrangler ATs.

The 295s are 35.1" tall, from the pic you showed you must have the clearance.
The 275s are 34.1" tall so no issue with clearance there.
One of my friends had Wrangler ATs on his Dodge and, his newish Tundra came with those, as well, so they must be relatively decent tires.
You'll be going from an 11.6" tread width to a 10.8" tread width so, definitely lighter perhaps.

I've been on Nitto Terra Grappler 285/65/R18 and they've been good tires for me and quiet, not as aggressive as the Ridge Grapplers. I recently upgraded my wheels and went to 295/70/R17 Toyo Open Country R/T Trails. They're aggressive but not as loud as the Ridge Grapplers and I'm very happy with them. From what I'm hearing from friends and reading they're going to be a more popular option than the Ridges, they also come with a 45,000 mile warranty.

I've found the BFG All-Terrains to be the best tires.
I've been on a few long road trips and no issues with noise.
10,000 miles later and they still look new.
Just get what you like but the BFGs are the best IMO.
