I just installed a truxxx leveling kit in my truck and raised the back 1 inch and the front over two inches. Wondering if a 285 75 17 will fit. I know a 285 70 17 will fit but would really like the taller tire. Has anyone tried this?

No I don't see a almost 34" tire fitting on a leveling kit without some trimming being done.

I have 285-70-17s and mine are about a half an inch from the inner fender at full lock. I doubt a 285-75-17 will fit with just a leveling kit.
