Temp Gauge question

My gauge will go up to just below the 210 mark during warmup. Then it drops to the middle line between 100 and 210 and hovers just above there all day long. Is this normal? It seems a bit cool to me. OEM t-stat installed and has been replaced and get same results.

On my 08 silverado it warms up to 210 and stays there. I thought it was running too hot my nephew whos a master mechanic for chevy tells me thats normal and they run that way for better fuel economy.

Does anyone have an idea how to reference the temperature gauge sensor. What is the correct term when asking for the single teminal saensor on the driverside head? Looking online, all I get is the 2 terminal coolant temp sensor for the computer.

Some sites list it as "temperature switch"

A tech verified the temp gauge was correct with the temps in the head with an infared gun.

My guage never goes higher then 75C (167F) usually hover between the 70C and 75C mark.. I discovered after alot of research the amount of ohms being sent through the 1 electric line to the guage is not correct. some people have been putting resistors in to get the correct readings. Also, I know my temperatures get to normal opperating temperature as the thermostat opens when it should, As well as had a tech II hooked up and varified by the pcm that it was getting to normal temp. so I just learned to live with the guage only getting up to 70-75
