I have a 12 Silverado with a 2.5" level kit and I'm curious how big of tires some people are running without rub?

Unfortunately, the fender clearance on our trucks is pretty poor. With a 2"-2.5" lift, you can easily run a 285/70/17, 275/70/18, 285/65/18, 275/60/20, 285/55/20, or 305/50/20. If you're willing to trim some plastic, then a 295/55/20 or 305/60/18 will fit. If you're willing to trim a little more plastic (and maybe even a little metal) then you can run a 295/70/17, 295/65/18, 275/65/20, or 305/55/20. And, all of that pertains to running stock (or highly positive offset) rims. If you choose aftermarket rims with a low or negative offset, then things will get even more difficult.

Do you mean that you bought 20" rims that have a +20mm offset? If so, then 17" tires won't work......

Well, that size would be over 35" tall, so that wouldn't fit without a 4"-6" suspension lift. And, I don't think any companies make that size anyway. With your 20" wheels, you should be able to run a 285/55/20, 305/50/20, or 275/60/20 without any trouble. A 295/55/20 would probably fit with some trimming.
