Take a hose and spray the radiator from the back (engine side) to the front. You'll be amazed how many bugs come out of there. Like others have said, next time it's having one of it's episodes open the hood and make sure the fans are on. Generally, overheating at highway speeds (if thermostat is known good) is a result of clogged (internally clogged, where the water goes) radiator or failing water pump. Sometimes waterpump fins end up dissolving over time if the cooling system isn't maintained.
