U Joints keep breaking

well, maybe the yoke's were damaged when it initially failed (spread apart, out of round, ovalled), or you got the wrong u-joints, or the driveshaft itself is damaged.  Or the u-joints weren't installed correctly.

I had a similar problem with joints busting every 3-6 months. With my truck having a 8" lift, I examined the the angle my drive shaft was sitting from the trans to the rear axle and having two blocks under each spring (a 3" +5"=8") the blocks ended up not being installed in the correct fashion. By turning the blocks rear to front facing I was able to decrease the angle and give the drive shaft a better sitting angle. Since then, I've replaced the u joint once over the past 3 years.
