I changed all the fluids on a friends 2000 GMC Sierra 1500 5.3L, 4WD 4 speed transmission. 75 K miles. 2 things made it easier. The rear differential you don't have to remove the cover to change the gear oil. There is a plug on the bottom of the differential to drain it and a fill plug on the side to fill it. Easy. The transmission pan is easy to drop because the exhaust isn't in the way. Easy. The transmission pan also has a drain plug in it. These 2 things made the fluid changes much easier than on my 2012. 

My guess it comes down to money. 

The rest of the fluids were the same to change.
