Hi. I bought a 2017 Sierra SLE and it came with 17" rims. I see different sizes up to 22" rims I believe. I don't care for the lifted/big tire look, but can I put say a 20" rim and all season tires on the truck? I have winter tires now, but I'd like to run an all season tire or a summer tire setup. What size tires will fit? Thanks for your help and insight.

Yes, you can totally do that. Lots of people like to change rim and tire sizes.

If you went with factory 20's the tire size to run is 275/55/20. That will be close enough to the factory 17in tire size to not throw the speedo off to far. It may change by a few KPH but no big deal.
