Just a tune in general can make the truck feel a lot better. Transmission tuning and certain things on the engine side and make it feel like a whole new truck. Finding someone that really knows these trucks is the key.

The plug and play tuners that you can buy do okay but an in person tune is always better if the person knows what they are doing.

You could also install an ethanol sensor and tune for that if E85 is available. GM gave the 5.3's like a 20hp/tq bump just running that fuel. But it costs you fuel mileage. Some people swap to a L86 intake manifold and throttle body from the 6.2's, but this requires a custom tune.

Past that some things will hurt your ability to fully pass emissions. Like a camshaft swap, long tube headers.

Then getting really spendy would be a supercharger kit. They make CARB certified supercharger kits but it'll cost you $7,000-8,000.
