I may be wrong but I thought the 03's had cabin filters. I thought they did away with them in '04. You may want to check (under the passenger's side dash). If you have one, it is probably clogged. I would start there first.

I've taken apart and cleaned several older vehicle fans/ducts/evaporators, etc. I've found all sorts of stuff inside including hay. So they can get clogged with stuff. In one case the fan was so clogged with stuff, it could not rotate anymore! (We thought the motor was burned out...)

Might want to take apart the fan area first as this would probably be easier to take apart. May be able to see into the evaporator with mirrors/flashlights with the fan pulled (I'm not familiar with your specific vehicle), and see if it needs cleaning or not.

If you do need to pull the evaporator, on some vehicles you would need to pull the whole dash out first to get to it! And of course discharge the A/C (have a mechanic recycle the refrigerant). Then it is usually recommended to replace the A/C receiver drier every time the A/C is opened up, prior to evacuating and recharging the A/C system.

The A/C receiver drier has a "desiccant" in it to absorb moisture from any air which gets in. This is a one time thing. Once it fills with moisture, it can't absorb anymore. Thus the need to replace it.

Also tape the ends of the tubes right after disconnecting anything from the A/C system so nothing gets inside.

Then refrigerant oil can accumulate inside the evaporator, if any oil leaks out as you are working on it, replace it with the same amount of refrigerant oil (I assume R134a oil).

Anyway if can be a lot of work to pull an evaporator, so I would do all I could by removing anything else I could prior to resorting to that!

Advance Auto Parts lists a cabin filter for a 2003 GMC 2500HD , diesel (Durmax), and not for the 2500 non HD, non deisel.

My old 03 2500HD didn't have one, nor does my 07.5 3500HD
