6000k FTW, that's what is in my crappy sig pic anyway. Relay depends, if you go 35w I say now, but 55w, I say yes. It's got about the slightest tint of blue to it, 5000k would be nearly absolute white.

I went with the 6000K for my headlights and fogs too and love em. I ended up needing a relay harness because they started to flicker and act funky. Once I installed the harness I haven't had any problems. I got everything from Turn Again Highlights. They really helped me out with everything.

8000k at 55watts over here. I say go with 6000k the 8000k were not as bright as a thought and anything above 8000k is for show IMO.. Best of luck

 

Edit: Not running a relay harness and no flickering problems. I ordered them from ddmtuning.com

You probably won't need a relay harness, as most HID kits are Plug & Play ...

 

I have a 2004 Silverado SS. I have installed Rikensport 993's 35w - 6000K HID's in both my Low and High beams. I also have done the 4-High Conversion on my headlights. When I go to High Beam, all four HID Headlights illuminate the roadway. :dunno::P

I'm running 35w 6000K from ddm and they are very white with a slight hint of blue, but is mainly noticeable when firing. I would reccomend running a relay harness just to prevent any un-needed stress on the wiring and switch.
