The latter looks like the ck375 22"

OE Wheel LLC has a set of CK375 repro in 20". I was thinking of getting a set myself before but decided an 18" with an A/T tire would give me the more aggressive look I would prefer

Never thought, but will running a 275/70/17 still let me run my stock mud flaps or will I have to ditch them? Really didn't want to trim at all.

You should be fine with a 275/70/17. I'm running the 18" equilivant of that size (275/65/18) now, without any rubbing issues...and I have aftermarket rims with +18mm offset. You should be able to run a 275/70/17 even without a leveling kit, using your stock rims.

Yeah they should be fine....unless you have some kind of crazy aftermarket flaps that really take up a lot of fender-well space

I'd put a 2" level on it, and run some 305/50/20 Terra Grapplers. IMO a wider tire looks better than a taller skinny one. My neighbor has this exact combo with no rub/trim, I'll see if I can get a pic.

which offset would I be looking for in my new 20" rims? My current ones are the ones pictured, not sure the offset, maybe someone can tell by looking. Maybe these rims have different offsets with the same look, IDK

Your stock 17's are a 17x7.5 with +31mm offset. All stock 1500 rims have a +31mm offset, but the 17's are 7.5" wide, the 18's are 8" wide, and the 20's are 8.5" wide....so the backspacing will vary accordingly. The more positive the offset, the more the rim is going to be tucked under the fender...which will reduce the chance of your tires rubbing if you go to a larger size.

Going to do the deed tomorrow after work. I'll post before and after pics. Decided on 285/70/17 Michelin LTX AT2, we'll see!

got it finished, I was just going to do the front, had it done and thought it looked a bit high in the front. Installed the 3" rear blocks and very glad I did. Love the new look. Right now I've got stock tires on the lift, but tomorrow I'm getting new skins. Can't wait. Will post pics then. Forgot to take pics in all the excitement.
