I have a 2013 Sierra Work Truck and I want to change the settings so it doesn't chirp the horn when I remotely lock/unlock the truck.

Do you have the buttons to the left of the cluster? If not you can add them to gain access to that feature

This has got me wondering. Say someone needed to access that feature and borrowed a friends buttons to turn off the chirp. And when said buttons were unhooked/returned, would the change(s) made remain? Or would it return to stock settings?

I don't see why it wouldn't keep the settings.
