95 Tahoe 5.7TBI - Constant issues

Plugged up catalytic converter?

If that was the case it wouldnt rev in park well.

Fuel pressure is my last guess

That's what I'm shooting for next.

I've had odd issues from when the ignition module under the distributor cap went out, as well as the coil going slightly bad. I think Advance could check the module, and the haynes manual had how to multimeter the coil.

For fuel pressure, you can borrow a tester from Autozone. IF it's similar to the 89 pickup, you attach the adapter to the output of the fuel filter underneath and check that way.

Module checked at local parts store, no issue. Yes they tried it numerous times to heat it up as well.

I'll look for the tester.

Also did a vacuum test, stays well above 20mmHg,

mr krogoth - I have an 01 Tahoe and I replaced the PCV, MAF, EGR, IAC, TPS but my truck was not stumbling/hesitating/clunking/ or knocking. So your issue may not be in the emissions lane. But along that line, your throttle body valve may not be opening all the way due to carbon deposits. Pick up a can of throttle body cleaner and clean it out.

But what you described sounds more in the fuel lane, try some low cost fixes to see if it works. Buy a bottle of STP concentrated fuel system or fuel injector cleaner, STP octane booster, and HEET to remove water in the fuel. (I can't think of the STP water remover). All the STP products can be used together. Run this through a tank full of gas and see if it helps.
