Sport mode all the time?

Mine stays in Sport mode all of time (I dont have to change it). Also checked MPG and I get better gas milage in Sport mode. 3-4 MPH better with the 6.2 RST.

Strange, what year is your truck?

Most fall back into "normal" mode and must be switched at each start up

My 2024 Denali 6.2 will stay in sport mode no matter how many times I cycle the truck on and off.

I'm new to the GM world and these new trucks, just got a Sierra 1500...is it safe to switch modes while in motion...like, while on the gas?

Yes.  If you are going from normal to sport while accelerating, it might downshift a gear and that's about it which is normal.

My bet is because the 6.2s now have the dual mode exhaust on them, so they changed the sport mode to operate like it does on Camaro and Corvette where it will stay in Sport every ignition cycle.
